If you’ve never had a soft-shell crab, you are missing out on a unique and very delectable experience! You need to try and buy soft shell crabs! What are they, and what makes them so different? Right before Maryland Blue Crabs shed their outer shells – or molt – they fatten up to make it through the process. The fatter the crab, the tastier it is! At Roger Dize Seafood, we take great care to harvest the crabs at just the right moment. We catch crabs we refer to as “peelers.” They’re crabs that are on the verge of shedding their hard shells. We place the peelers in tanks on our dock, and watch them night and day. At the right moment, they start to molt. When their outer shells have peeled, we only have a small window of opportunity to harvest these newly soft-shell crabs. Within three to four hours, their shells will become hard, again. So, we have to work fast to remove the soft-shelled crabs from the water and prepare them for you to buy.
Soft-shell crabs are a true seafood delicacy. Soft-shell crabs are fatter and more flavorful than regular, hard-shell crabs. They have a sweet, flaky meat, and a tender, buttery flavor. Everything about a soft-shell crab is edible, including the shell. They’re slightly crunchy, adding texture to your meal. You can prepare soft-shell crabs by boiling, broiling, sautéing, steaming, frying or grilling. Buy soft shell crabs and make them part of a fanciful display, or just place them on a bun and dig in.
They’re only in season from April until mid-September. It’s quite the process to clean soft-shell crabs. But at Roger Dize, we take care of that for you. We clean, individually wrap, and freeze each crab, so all you have to do is prepare them in your favorite dish the way you like them.
