Crabs tend to fatten up to make it through the process of molting or shedding their outer shell, as we Chesapeake Bay locals call it, making soft shell crabs very flavorful. Soft crab lovers appreciate that our soft crabs, here at Roger Dize Seafood, are cleaned, individually wrapped, frozen and ready for the frying pan. Our Maryland, Chesapeake Bay, soft shell crabs are easy to prepare and are a true seafood delicacy.
Chesapeake Bay soft shell crabs are at a growth stage when the crab sheds its outer shell. We catch the crabs prior to them shedding, at this stage we call them peelers. The peelers are brought into our dock and placed in tanks, where we monitor them, throughout the day and night, waiting for them to shed their hard outer shell. We must remove, the now soft crabs, from the water within a few hours of shedding before the tender shell begins to harden again. Soft shell crabs are sold whole. They are in season from April to mid-September and vary in size from 4-6 inches.
To clean a soft-shell crab, cut away the eyes and mouth with a pair of scissors. Fold back one corner of the top shell to expose the pale orange gills/lungs. Pull away and discard the gills from both sides of the crab. Turn the crab over and fold back the tail flap, or as we call it “the apron”. Pull it away from the body and discard. The crab is now cleaned. Our soft shells will arrive pre-cleaned, individually wrapped and ready to prepare in your favorite dish.
